Ingredients

The bars

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ¾ cup granulated sugar
  • Zest of 2 small limes lime zest
  • ¾ cup butter, at room temperature
  • ¼ cup powdered sugar
  • 2 large eggs
  • 1 tablespoon fresh lime juice
  • ½ teaspoon vanilla extract
  • ½ teaspoon coconut extract

The Coconut Frosting

  • 1 cup unsalted butter, at room temperature
  • 3 1/2 cups confectioners' sugar
  • Zest of 1 lime lime zest
  • 1 teaspoon fresh lime juice
  • 1 ½ teaspoons coconut extract
  • ½ teaspoon vanilla extract
  • 1 cup toasted coconut for sprinkling

Instructions

  1. Preheat the oven to 375°F and prepare a 9x13 pan with cooking spray.
  2. Whisk together flour, baking powder, and salt in a medium bowl.
  3. Combine granulated sugar and lime zest in a small bowl, rubbing together until fragrant.
  4. In a stand mixer, beat butter and lime sugar mixture until combined, then add powdered sugar and beat until light and fluffy.
  5. Incorporate eggs, lime juice, and vanilla, mixing until smooth.
  6. Gradually add the flour mixture and mix until just combined.
  7. Spread the dough evenly in the prepared pan and bake for 12-14 minutes until set but not browned.
  8. Allow the bars to cool completely.
  9. To make the frosting, beat butter until smooth, then mix in lime zest, lime juice, vanilla, and coconut extract.
  10. Gradually add powdered sugar until smooth.
  11. Frost the cooled bars with coconut frosting and sprinkle with toasted coconut.
  12. Cut into squares and serve.
