Instructions
- Preheat the oven to 375°F and prepare a 9x13 pan with cooking spray.
- Whisk together flour, baking powder, and salt in a medium bowl.
- Combine granulated sugar and lime zest in a small bowl, rubbing together until fragrant.
- In a stand mixer, beat butter and lime sugar mixture until combined, then add powdered sugar and beat until light and fluffy.
- Incorporate eggs, lime juice, and vanilla, mixing until smooth.
- Gradually add the flour mixture and mix until just combined.
- Spread the dough evenly in the prepared pan and bake for 12-14 minutes until set but not browned.
- Allow the bars to cool completely.
- To make the frosting, beat butter until smooth, then mix in lime zest, lime juice, vanilla, and coconut extract.
- Gradually add powdered sugar until smooth.
- Frost the cooled bars with coconut frosting and sprinkle with toasted coconut.
- Cut into squares and serve.
