Instructions
- Preheat the oven to 350°F and prepare an 8x8-inch baking pan with parchment paper.
- In a large bowl, whisk together the flour, sugar, salt, baking powder, and lime zest.
- In another bowl, whisk the eggs, egg yolk, lime juice, vanilla extract, and coconut extract.
- Combine the wet and dry ingredients, then add the melted butter and mix until smooth.
- Spread the batter evenly in the prepared pan and bake for 18-20 minutes.
- For the glaze, whisk together the powdered sugar, sour cream, lime juice, and lime zest.
- Once the bars are cooled, drizzle the glaze over them and top with toasted coconut.
- Refrigerate for 1-2 hours before cutting into squares.
