Ingredients

Crust

  • 2 cups all-purpose flour
  • ¾ cup shredded sweetened coconut
  • ½ cup powdered sugar
  • 1 cup butter

Filling

  • 4 large eggs
  • ¼ cup freshly-squeezed lime juice
  • 1 teaspoon baking powder
  • ¼ cup all-purpose flour
  • 2 cups white sugar

Glaze

  • 1 cup powdered sugar
  • 3 tablespoons strained freshly squeezed lime juice

Topping

  • ¼ cup shredded sweetened coconut

Instructions

  1. Preheat the oven to 350°F and prepare a 9x13 pan.
  2. Mix the flour, powdered sugar, and coconut, then cut in the butter until crumbly.
  3. Press the mixture into the pan and bake for 15-20 minutes until golden.
  4. While the crust bakes, mix the eggs, lime juice, flour, sugar, and baking powder until frothy.
  5. Pour the filling over the warm crust and bake for another 20-25 minutes until golden.
  6. Cool completely, then prepare the glaze by mixing the ingredients until smooth.
  7. Spread the glaze over the bars and refrigerate for at least 2 hours before cutting into squares.
