Ingredients

The crust

  • cup graham cracker crumbs
  • 6 tablespoons salted butter, melted
  • ¼ cup sugar
  • zest of one lime

The filling

  • 2 large egg yolks
  • 1 14 oz. can fat free sweetened condensed milk
  • ½ cup lime juice

Instructions

  1. Preheat the oven to 350°F and grease an 8-inch square pan.
  2. Combine the graham cracker crumbs, melted butter, sugar, and lime zest, then press into the prepared pan, extending the crust mixture one inch up the sides.
  3. Bake the crust for 10 minutes and allow it to cool completely.
  4. Once cooled, mix the egg yolks and condensed milk until well combined, then stir in the lime juice.
  5. Pour the filling into the crust, ensuring it reaches the edges, and bake for 15 minutes or until just set.
  6. Cool to room temperature, then chill for at least one hour, preferably overnight.
