Instructions
- Preheat the oven to 350°F and line baking sheets with parchment paper.
- In a medium bowl, whisk together flour, baking soda, and salt.
- In a small bowl, mix sugar and lime zest by rubbing them together.
- In a stand mixer, beat the butter until creamy, then add the sugar/lime mixture and beat until fluffy.
- Add the egg and vanilla, mixing well.
- Gradually mix in the flour mixture and buttermilk, starting and ending with flour.
- Stir in the toasted coconut.
- Drop dough by level tablespoons onto prepared baking sheets, leaving space between cookies.
- Bake for about 11 minutes, then cool on the baking sheet briefly before transferring to a wire rack.
- For the glaze, whisk together confectioners sugar, lime juice, and lime zest to desired consistency and drizzle over cookies.
