Lightened Up Curry Egg Salad

Ingredients

  • 8 large eggs
  • 3 tablespoons chopped onion
  • 1 unit red pepper
  • 1 teaspoon salt
  • 2 teaspoons curry powder
  • ΒΌ cup light mayo
  • 1 unit mango

Instructions

  1. Hard boil the eggs in boiling water for 8 minutes, then cool and peel them.
  2. Remove the yolks and finely chop the egg whites.
  3. Chop the red pepper and onion, then combine with egg whites, salt, curry, and mayo in a bowl.
  4. Stir until well combined and season with pepper to taste.
  5. Add the diced mango just before serving.
