French Green Lentils Salad with Cherry Tomatoes

The vinaigrette

Instructions
- 1. Cook lentils with water and vegetable broth bouillon in a pot, bringing to a boil and then simmering for 15 to 20 minutes until tender.
- 2. Drain lentils and chill them in a large bowl for at least 30 minutes.
- 3. Mix in diced celery, halved cherry tomatoes, shallots, and parsley.
- 4. Prepare the vinaigrette by whisking together olive oil, mustard, vinegar, herbes de Provence, black pepper, and minced garlic.
- 5. Combine the dressing with the lentil mixture, toss well, and season with sea salt if desired. Chill until serving.
