French Green Lentils Salad with Cherry Tomatoes

Ingredients

The salad

  • 3 cups dried green lentils
  • 5 cups water
  • 1 cube vegetable broth bouillon
  • 4 stalks celery, diced
  • cups cherry tomatoes, halved
  • 2 medium shallots (or 1/2 small onion)
  • ¼ cup packed chopped fresh parsley

The vinaigrette

  • tablespoons extra virgin olive oil
  • 2 teaspoons Dijon mustard
  • 2 tablespoons red wine vinegar
  • 1 teaspoon herbes de Provence
  • to taste freshly ground black pepper
  • 1 medium garlic clove, minced
  • pinch sea salt (optional)

Instructions

  1. 1. Cook lentils with water and vegetable broth bouillon in a pot, bringing to a boil and then simmering for 15 to 20 minutes until tender.
  2. 2. Drain lentils and chill them in a large bowl for at least 30 minutes.
  3. 3. Mix in diced celery, halved cherry tomatoes, shallots, and parsley.
  4. 4. Prepare the vinaigrette by whisking together olive oil, mustard, vinegar, herbes de Provence, black pepper, and minced garlic.
  5. 5. Combine the dressing with the lentil mixture, toss well, and season with sea salt if desired. Chill until serving.
