Sauteed Garlic and Tomato Lentil Salad

Ingredients

  • 1 cup dry green (brown) lentils
  • ½ cup dry light bulgur
  • 3–4 cups fresh tomatoes, chopped
  • 6–8 cloves garlic, minced
  • 2 tablespoons olive oil
  • ½ cup parsley, very finely chopped
  • ¼ cup citrus/vinaigrette dressing
  • to taste salt and pepper
  • to taste fresh lemon juice

Instructions

  1. Cook the lentils and bulgur in vegetable broth according to package directions, then combine and set aside.
  2. Saute the tomatoes, garlic, and olive oil over low heat for about 15 minutes until soft and fragrant.
  3. Remove from heat and add the lentils, bulgur, and parsley to the pan, stirring to combine.
  4. Season with dressing, salt, pepper, and lemon juice to taste. Serve hot or cold.
