Crème Brûlée Cheesecake Bars

Ingredients

The crust

  • 1 ¼ cups finely crushed graham cracker crumbs
  • 2 Tbsp granulated sugar
  • 6 Tbsp butter, melted

The cheesecake filling

  • ¾ cup granulated sugar
  • 1 ½ Tbsp all-purpose flour
  • 2 8 oz pkgs cream cheese, softened
  • 3 large eggs
  • 3 Tbsp heavy cream
  • 3 Tbsp sour cream
  • 1 tsp vanilla extract

The topping

  • 6 Tbsp granulated sugar
  • to taste whipped cream, fresh raspberries and fresh mint for garnish (optional)

Instructions

  1. Preheat the oven to 350°F and butter an 8x8-inch baking dish.
  2. Mix the graham cracker crumbs and sugar in a bowl, then add melted butter and combine.
  3. Press the mixture into the bottom of the baking dish and bake for 10 minutes, then let it cool.
  4. Reduce the oven temperature to 325°F.
  5. In a mixing bowl, whisk together sugar and flour, then add cream cheese and blend until smooth.
  6. Add eggs one at a time, mixing after each addition, then add heavy cream, sour cream, and vanilla, blending until combined.
  7. Pour the filling over the crust and place the baking dish in a larger dish filled with hot water.
  8. Bake for 42-45 minutes until the cheesecake is slightly jiggly, then turn off the oven and let it rest for 10 minutes.
  9. Cool at room temperature for 1 hour, then cover and chill for 4 hours.
  10. Cut into squares, sprinkle with sugar, and caramelize with a culinary torch.
  11. Garnish with whipped cream, raspberries, and mint just before serving.
