Ingredients

The base

  • 1 cup brown rice (cooked)
  • 1 pound broccoli (roughly chopped)
  • 2 cups chicken (cooked, and shredded or diced)

The sauce

  • 3 tablespoons butter
  • ½ cup onion (diced)
  • 2 cloves garlic (minced)
  • 3 tablespoons whole-wheat flour
  • 1 cup milk
  • ½ cup sour cream
  • 2 cups cheddar cheese (sharp, shredded)
  • 4 teaspoons yellow curry powder
  • 1 teaspoon salt
  • to taste pepper

Instructions

  1. Preheat the oven to 400°F.
  2. Combine the cooked rice, broccoli, and chicken in a casserole dish and set aside.
  3. Melt the butter in a sauté pan over medium heat and cook the onions until softened.
  4. Add the garlic and flour, cooking until the flour begins to brown.
  5. Whisk in the milk and cook until thickened, then stir in the sour cream, cheese, curry powder, salt, and pepper.
  6. Pour the sauce over the rice, broccoli, and chicken mixture, and mix well.
  7. Spread the mixture evenly in the baking dish and bake for 10 to 12 minutes.
  8. Broil for a couple of minutes to brown the top, then serve warm.
