Instructions
- Preheat the oven to 375 degrees and coat a 9"x13" pan with cooking spray.
- Melt the butter in a pot over medium heat and cook the onion until translucent.
- Stir in the flour and cook for 1 minute, then slowly whisk in the milk and cook until thickened.
- Add cream cheese, 2½ cups of cheddar cheese, salt, pepper, smoked paprika, and garlic to the sauce, stirring until smooth.
- In a large bowl, combine broccoli, rice, and chicken, then pour the sauce over and toss to coat.
- Transfer the mixture to the prepared pan, smooth the top, and sprinkle with remaining cheese and crushed crackers.
- Bake for 20 minutes until bubbly and golden brown, then sprinkle with parsley before serving.
