Ingredients

The vegetables

  • 6 cups raw veggies of choice, cut into bite-sized pieces

The seasoning

  • 1 teaspoon sea salt
  • 1 teaspoon oregano
  • ½ teaspoon garlic powder
  • ½ teaspoon ground black pepper
  • 1 drizzle oil or broth

The pasta

  • 12 ounces pasta of choice

Optional toppings

  • to taste vegan parmesan cheese

Instructions

  1. Preheat the oven to 450°F (230°C).
  2. Place the veggies on a parchment-lined baking sheet and drizzle with oil, sea salt, oregano, garlic powder, and pepper; mix to combine.
  3. Roast the veggies for 20-30 minutes, adjusting time based on the size of the pieces.
  4. Cook the pasta according to package directions.
  5. Toss the roasted veggies with the cooked pasta and serve, optionally topped with vegan parmesan cheese.
