Single Serving Buckwheat Cookies

Ingredients

  • 2 Tablespoons buckwheat flour
  • 1 Tablespoon sucanat or coconut crystals
  • 2 teaspoons coconut oil, melted
  • 1 teaspoon water
  • ¼ teaspoon vanilla extract
  • a pinch sea salt
  • 2 teaspoons dark chocolate chips

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a small bowl, mix the first six ingredients until a uniform dough forms.
  3. Fold in the dark chocolate chips.
  4. Divide the dough into two balls and press them onto the baking sheet.
  5. Flatten the cookies gently with your fingers.
  6. Bake for 8-9 minutes until the outside is firm and the inside is soft.
  7. Allow to cool briefly before serving.
