Ingredients

  • 1 stick salted butter, softened
  • 1 cup coconut sugar
  • 1 large egg
  • ½ teaspoon vanilla extract
  • 1 cup light buckwheat flour
  • 6 tablespoons cocoa powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ¾ cup dark chocolate chips

Instructions

  1. Preheat the oven to 350ºF and line a large baking sheet with parchment paper.
  2. In a large bowl, combine the softened butter and coconut sugar, mixing well.
  3. Add the egg and vanilla extract, stirring again.
  4. Incorporate the buckwheat flour, cocoa powder, baking soda, and salt, stirring until a thick dough forms.
  5. Fold in the chocolate chips, reserving a few for topping.
  6. Scoop the dough onto the prepared baking sheet and press the reserved chocolate chips into the tops.
  7. Bake for 9 to 10 minutes, allowing the cookies to spread slightly.
  8. Cool on the pan for at least 20 minutes before enjoying or transferring to a wire rack to cool completely.
