Instructions
- Preheat the oven to 350ºF and line a large baking sheet with parchment paper.
- In a large bowl, combine the softened butter and coconut sugar, mixing well.
- Add the egg and vanilla extract, stirring again.
- Incorporate the buckwheat flour, cocoa powder, baking soda, and salt, stirring until a thick dough forms.
- Fold in the chocolate chips, reserving a few for topping.
- Scoop the dough onto the prepared baking sheet and press the reserved chocolate chips into the tops.
- Bake for 9 to 10 minutes, allowing the cookies to spread slightly.
- Cool on the pan for at least 20 minutes before enjoying or transferring to a wire rack to cool completely.
