Easy Vegan Buckwheat Chocolate Chip Cookies

Instructions
- Preheat the oven to 350ºF and prepare a baking sheet with parchment paper or a silicone mat.
- In a large bowl, mix the buckwheat flour, coconut sugar, melted coconut oil, water, vanilla extract, sea salt, and baking soda.
- Add the apple cider vinegar to the mixture and stir to combine.
- Fold in the dark chocolate chips.
- Scoop the dough into 12 mounds on the baking sheet, spacing them evenly.
- Flatten each mound slightly as they will not spread much during baking.
- Bake for about 10 minutes or until the edges are firm.
- Allow the cookies to cool for at least 10 minutes before serving.
