Ingredients

The cake

  • 2 cups pumpkin puree
  • 1 cup white sugar
  • ½ cup vegetable oil
  • ½ cup applesauce
  • 3 units eggs
  • 2 cups all purpose flour
  • ½ cup Almond Breeze or milk
  • 2 tsp baking soda
  • 2 tsp cinnamon
  • ½ tsp salt

The icing

  • 1 pkg cream cheese
  • 5 tbsp butter
  • 1 tsp vanilla
  • 3 cups icing sugar

The topping

  • 1 cup chopped nuts

Instructions

  1. Preheat the oven to 350°F and grease the cake pan.
  2. In a large bowl, beat together the pumpkin, sugar, and oil. Add the eggs and mix well.
  3. In another bowl, mix the dry ingredients, then combine with the wet ingredients and beat until just mixed.
  4. Pour the batter into the cake pan and bake for approximately 25-30 minutes.
  5. While the cake is baking, prepare the cream cheese icing by beating together the cream cheese, butter, vanilla, and icing sugar until smooth.
  6. Once the cake is cooled, ice it and top with walnuts.
