Authentic Spanish Rice

Ingredients

  • 1 cup long grain white rice
  • 2 T Olive or Avocado oil
  • 1 6-oz can tomato sauce
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 1 tsp salt
  • 2 cups water or broth
  • ¼-½ optional white or yellow onion, diced
  • 2 cloves garlic, minced
  • optional chopped tomatoes
  • to taste Cilantro, chopped (for garnish)

Instructions

  1. Heat oil in a heavy saucepan or deep frying pan.
  2. Add rice and brown it to ensure even cooking.
  3. Once browned, add tomato sauce (use 3/4 to the whole can based on preference).
  4. Add water or broth, garlic, onion, and salt, and bring to a boil.
  5. Reduce heat, cover, and simmer for about 20 minutes until liquid is absorbed and rice is cooked.
  6. For a variation, sauté minced garlic and diced onion in oil before adding the rice.
  7. Garnish with chopped cilantro if desired.
