Spanish Rice

Ingredients

The rice

  • 1 cup basmati rice
  • cups vegetable broth

The vegetables

  • ½ white onion diced
  • 2 cloves garlic
  • ½ cup diced fresh tomatoes or canned tomato sauce
  • 1 jalapeño pepper chopped

The flavorings

  • 1 tablespoon tomato paste
  • ½ teaspoon sea salt
  • ¼ teaspoon dried oregano
  • 1 tablespoon extra-virgin olive oil

Instructions

  1. Rinse the rice under cool running water until the water runs clear.
  2. Heat olive oil in a medium pot over medium heat and sauté the onion until soft.
  3. Add the rice and toast it for 2 minutes until fragrant.
  4. Stir in the tomato paste and garlic, then add the tomatoes, jalapeño, salt, oregano, and broth.
  5. Bring to a boil, then cover, reduce heat, and simmer for 15 minutes until liquid is absorbed.
  6. Remove from heat and let sit covered for 10 minutes before fluffing with a fork.
