Spanish Rice

Instructions
- Rinse the rice under cool running water until the water runs clear.
- Heat olive oil in a medium pot over medium heat and sauté the onion until soft.
- Add the rice and toast it for 2 minutes until fragrant.
- Stir in the tomato paste and garlic, then add the tomatoes, jalapeño, salt, oregano, and broth.
- Bring to a boil, then cover, reduce heat, and simmer for 15 minutes until liquid is absorbed.
- Remove from heat and let sit covered for 10 minutes before fluffing with a fork.
