Paleo Chocolate Chip Ice Cream with Roasted Cherries

Ingredients

Ice Cream

  • 2 cans full-fat coconut cream
  • ½ cup pure maple syrup
  • 1 tablespoon vanilla extract
  • ½ tablespoon lemon juice

Roasted Cherries

  • 2 cups pitted cherries
  • ¼-⅓ cup pure maple syrup
  • 2 teaspoons arrowroot powder

Chocolate

  • ½ cup dairy-free chocolate chips
  • 2 teaspoons coconut oil

Instructions

  1. Preheat the oven to 400°F.
  2. Combine cherries, maple syrup, and arrowroot in a baking dish and roast for 30 to 40 minutes, stirring every 15 minutes.
  3. Let the roasted cherries cool completely.
  4. Blend coconut cream, maple syrup, and vanilla extract until smooth.
  5. Pour the mixture into a frozen ice cream maker bowl and churn according to the manufacturer's instructions.
  6. Melt chocolate chips and coconut oil together, stirring until smooth.
  7. Once the ice cream is soft serve consistency, drizzle in the melted chocolate while churning.
  8. Layer half of the ice cream in a loaf pan, add half of the roasted cherries, then top with the remaining ice cream and cherries.
  9. Drizzle with remaining chocolate mixture and freeze for 1 to 4 hours before serving.
