Instructions
- Preheat the oven to 400°F.
- Combine cherries, maple syrup, and arrowroot in a baking dish and roast for 30 to 40 minutes, stirring every 15 minutes.
- Let the roasted cherries cool completely.
- Blend coconut cream, maple syrup, and vanilla extract until smooth.
- Pour the mixture into a frozen ice cream maker bowl and churn according to the manufacturer's instructions.
- Melt chocolate chips and coconut oil together, stirring until smooth.
- Once the ice cream is soft serve consistency, drizzle in the melted chocolate while churning.
- Layer half of the ice cream in a loaf pan, add half of the roasted cherries, then top with the remaining ice cream and cherries.
- Drizzle with remaining chocolate mixture and freeze for 1 to 4 hours before serving.
