Ingredients

The eggplant

  • 2 medium Eggplant

The seasoning

  • ¼ cup Olive oil
  • ½ tsp Sea salt
  • ½ tsp Garlic powder
  • ¼ tsp Black pepper

Instructions

  1. Preheat the oven to 400°F (204°C).
  2. Slice the eggplant into circles about ½ inch thick.
  3. Arrange the slices on a baking sheet in a single layer.
  4. Brush with olive oil and sprinkle with salt, garlic powder, and black pepper. Flip and repeat.
  5. Roast in the oven for 30-35 minutes until soft and caramelized.
