Ingredients

The eggplant

  • 1 medium Eggplant

The seasoning

  • ½ tsp Garlic powder
  • ¼ tsp Sea salt
  • ¼ tsp Black pepper

The oil

  • ¼ cup Olive oil

Instructions

  1. Slice the eggplant into 1/4 inch thick rounds.
  2. Sprinkle the slices with garlic powder, sea salt, and black pepper.
  3. Heat 2 tablespoons of olive oil in a skillet over medium-low to medium heat.
  4. Add the eggplant slices in a single layer and sauté for 3-6 minutes per side until soft and caramelized.
  5. Repeat with remaining slices, adding more oil as needed.
