Cabbage Stir Fry

Ingredients

The stir fry

  • 1 lb Boneless skinless chicken breast (cut into 1-inch pieces)
  • 1 tsp Sea salt (divided)
  • ½ tsp Black pepper (divided)
  • 2 tbsp Olive oil (divided)
  • 6 cloves Garlic (minced)
  • 2 tbsp Fresh ginger (minced; or ½ tsp ground ginger)
  • ½ large Onion (diced)
  • 1 large Bell pepper (diced)
  • 1 medium head Cabbage (chopped or coarsely shredded; ~8-10 cups)
  • 2 medium Carrots (shredded)
  • ¼ cup Coconut aminos (or low-sodium soy sauce)
  • 2 tbsp Honey (optional)

Optional garnishes

  • 2 tsp Toasted sesame oil
  • ¼ cup Green onions (sliced)
  • 1 tbsp Sesame seeds (optional)

Instructions

  1. Pat the chicken pieces dry and season with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat and cook the chicken until golden brown.
  3. Transfer the chicken to a plate and keep warm.
  4. Reduce heat to medium, add more olive oil, and sauté garlic and ginger until fragrant.
  5. Add onions and bell peppers, cooking until the onions are translucent.
  6. Whisk together coconut aminos and honey, if using.
  7. Increase heat and add cabbage, carrots, and coconut aminos mixture; stir fry until tender.
  8. Return the chicken to the pan and heat through.
  9. Remove from heat, stir in toasted sesame oil, and garnish with green onions and sesame seeds if desired.
