Low Carb Keto Chicken Stir Fry

Ingredients

  • ¼ cup Olive oil
  • 1 lb Boneless skinless chicken breast
  • ½ tsp Sea salt
  • ¼ tsp Black pepper
  • 4 cloves Garlic
  • 6 oz Broccoli
  • 1 large Red bell pepper
  • ¼ cup Chicken bone broth
  • 1 lb Cauliflower rice
  • ¼ cup Coconut aminos
  • 1 tsp Toasted sesame oil
  • ¼ cup Green onions

Instructions

  1. Heat olive oil in a large skillet or wok over medium-high heat and cook the chicken pieces seasoned with salt and pepper until golden and barely cooked through.
  2. Remove the chicken from the pan and set aside, covering to keep warm.
  3. Add more olive oil to the pan and sauté minced garlic until fragrant.
  4. Add broccoli and bell peppers, stir-frying until the broccoli is bright green and peppers start to soften.
  5. Pour in the bone broth, deglazing the pan, and cover to simmer until the broccoli is crisp-tender.
  6. Add coconut aminos, deglazing again, then return the chicken to the pan along with the cauliflower rice.
  7. Increase heat and stir-fry until the cauliflower is soft and the chicken is fully cooked.
  8. Remove from heat, stir in toasted sesame oil, and adjust seasoning if needed. Top with green onions before serving.
