Instructions
- Heat olive oil in a large skillet or wok over medium-high heat and cook the chicken pieces seasoned with salt and pepper until golden and barely cooked through.
- Remove the chicken from the pan and set aside, covering to keep warm.
- Add more olive oil to the pan and sauté minced garlic until fragrant.
- Add broccoli and bell peppers, stir-frying until the broccoli is bright green and peppers start to soften.
- Pour in the bone broth, deglazing the pan, and cover to simmer until the broccoli is crisp-tender.
- Add coconut aminos, deglazing again, then return the chicken to the pan along with the cauliflower rice.
- Increase heat and stir-fry until the cauliflower is soft and the chicken is fully cooked.
- Remove from heat, stir in toasted sesame oil, and adjust seasoning if needed. Top with green onions before serving.
