Chicken and Broccoli Stir Fry

Instructions
- Heat 1 teaspoon of oil in a large frying pan over medium heat and sauté the broccoli and mushrooms for about 4 minutes until tender.
- Add the ginger and garlic, cooking for an additional 30 seconds.
- Remove the vegetables from the pan and cover them.
- Wipe the pan clean and increase the heat to high, adding the remaining tablespoon of oil.
- Season the chicken with salt and pepper, then add it to the pan in a single layer, cooking for 3-4 minutes on each side until golden brown.
- Return the vegetables to the pan and cook for 2 more minutes until warmed through.
- In a bowl, whisk together the oyster sauce, chicken broth, sugar, sesame oil, and soy sauce. In a small bowl, mix the cornstarch with a tablespoon of cold water.
- Pour the sauce mixture over the chicken and vegetables, cooking for 30 seconds.
- Add the cornstarch mixture and bring to a boil, cooking for an additional minute until the sauce thickens.
- Serve immediately, with rice if desired.
