Chicken and Broccoli Stir Fry

Ingredients

The stir fry

  • 1 lb chicken breast, thinly sliced
  • 1 tablespoon sesame oil
  • 1 medium red pepper, julienned
  • 3 cups broccoli florets
  • 1 clove garlic, minced

The stir fry sauce

  • cup tamari sauce
  • cup chicken broth
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • teaspoon red pepper flakes
  • 1 tablespoon honey
  • 1 tablespoon arrowroot
  • to taste sesame seeds and sliced green onion for garnish

Instructions

  1. Prepare the stir fry sauce by whisking together tamari sauce, chicken broth, minced garlic, ground ginger, red pepper flakes, honey, and arrowroot in a small bowl.
  2. Heat sesame oil in a wok or large skillet over medium-high heat.
  3. Add half of the sliced chicken to the wok and sauté until cooked through, about 4-5 minutes. Remove and set aside, then repeat with the remaining chicken.
  4. In the same wok, add the julienned red pepper and sauté for 2 minutes.
  5. Add minced garlic and broccoli florets, sautéing for another 2 minutes.
  6. Return the cooked chicken to the wok along with the stir fry sauce, tossing to coat. Cover and cook for 2-3 minutes.
  7. Serve the stir fry plain or over rice, garnished with sesame seeds and sliced green onions if desired.
