Chicken and Broccoli Stir Fry

Chicken and Broccoli Stir Fry

boneless skinless chicken breast

red pepper, sliced

broccoli, chopped into florets (~4 cups)

Instructions
- Prepare the stir fry sauce by mixing all ingredients except cornstarch in a bowl and set aside.
- Slice the red pepper and chop the broccoli into bite-sized pieces.
- Slice the chicken breast into thin pieces and set aside.
- Heat 1 tablespoon of olive oil in a large pan over medium/high heat and sauté the chicken for about 5-7 minutes until almost fully cooked, then remove from the pan.
- Add the remaining tablespoon of olive oil to the pan and sauté the vegetables for about 2 minutes, then add water and cover to steam for 3-5 minutes until broccoli is cooked but still crunchy.
- Move the veggies to one side of the pan, add the sauce to the other side, and whisk in the cornstarch until dissolved.
- Return the chicken to the pan, mix everything together, and let simmer for an additional 2-3 minutes.
- Serve with your favorite grain or meal-prep for later.
