Chicken and Broccoli Stir Fry

Ingredients

Stir Fry Sauce

  • ½ cup low sodium soy sauce or tamari
  • ½ cup honey or maple syrup
  • 1 tablespoon minced garlic
  • 2 teaspoons sriracha
  • 2 teaspoons white rice vinegar
  • 2 tablespoons water
  • 3 teaspoons cornstarch

Chicken and Broccoli Stir Fry

  • 2 tablespoons olive oil
  • 1 lb boneless skinless chicken breast
  • 1 large red pepper, sliced
  • 1.5 lbs broccoli, chopped into florets (~4 cups)
  • 2 tablespoons water

Instructions

  1. Prepare the stir fry sauce by mixing all ingredients except cornstarch in a bowl and set aside.
  2. Slice the red pepper and chop the broccoli into bite-sized pieces.
  3. Slice the chicken breast into thin pieces and set aside.
  4. Heat 1 tablespoon of olive oil in a large pan over medium/high heat and sauté the chicken for about 5-7 minutes until almost fully cooked, then remove from the pan.
  5. Add the remaining tablespoon of olive oil to the pan and sauté the vegetables for about 2 minutes, then add water and cover to steam for 3-5 minutes until broccoli is cooked but still crunchy.
  6. Move the veggies to one side of the pan, add the sauce to the other side, and whisk in the cornstarch until dissolved.
  7. Return the chicken to the pan, mix everything together, and let simmer for an additional 2-3 minutes.
  8. Serve with your favorite grain or meal-prep for later.
