Cabbage Stir Fry

Instructions
- Heat a wok or skillet and stir fry the cabbage without oil for 3-5 minutes until lightly charred.
- Push the cabbage to the edges and add avocado oil, leeks, ginger, and garlic to the center, sautéing for 1-2 minutes until leeks are wilted.
- Add salt, sesame oil, soy sauce, mirin, and rice vinegar, stirring until heated through, then mix in green onions and cilantro.
- Serve over rice, buckwheat soba, or rice noodles.
