Ingredients

The chili

  • 1 Tbsp avocado oil and olive oil
  • 2 cups chopped yellow onion
  • 1 medium green bell pepper, diced
  • 6 cloves garlic, minced
  • 1 ½ pounds grass-fed ground beef or ground turkey
  • 1 28-oz can diced tomatoes
  • ½ 6-oz can tomato paste
  • 1 14-oz can pumpkin puree
  • ½ – 1 cup chicken broth or water
  • 2 ½ tsp dried oregano
  • 2 Tbsp chili powder
  • ¾ tsp ground cinnamon
  • 2 tsp ground cumin
  • 1 tsp sea salt
  • ½ tsp black pepper
  • ¼ – ½ tsp cayenne (optional)

Suggested toppings

  • to taste diced avocado
  • to taste fresh cilantro
  • to taste sliced green onions
  • to taste lime wedges
  • to taste hot sauce
  • to taste sour cream
  • to taste shredded cheese (omit for Whole30)

Instructions

  1. Heat oil in a large pan and sauté onions and peppers until softened.
  2. Add garlic and cook until fragrant.
  3. Add ground beef, breaking it up as it cooks until nearly done.
  4. Drain excess liquid and transfer the mixture to the slow cooker.
  5. Add remaining ingredients and stir well.
  6. Set slow cooker to LOW for 6-7 hours or HIGH for 3-4 hours.
  7. Serve with desired toppings.
