Ingredients

  • 1 lb small raw shrimp, peeled & deveined
  • ½ cup lime juice
  • cup English cucumber, diced
  • 2 medium Roma tomatoes, diced
  • 1 medium jalapeño, diced
  • ¼ cup red onion, diced
  • cup cilantro, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • to taste salt & pepper

Instructions

  1. Dice the shrimp into smaller bite-sized pieces.
  2. Soak the shrimp in lime juice for 5 to 10 minutes until they turn opaque.
  3. Add cucumber, tomato, jalapeño, red onion, cilantro, garlic, cumin, salt, and pepper to the shrimp and mix well.
  4. Cover and refrigerate for at least 1 hour to allow flavors to meld.
  5. Serve as is or with tortilla chips.
