Shrimp Ceviche

Instructions
- Peel and clean the shrimp by removing the tail and shell, then slice the back to remove the vein.
- Chop the shrimp into ½-inch pieces and place in a bowl with citrus juice, tossing to coat.
- Cover and refrigerate until the shrimp is opaque, about 2 to 4 hours.
- Drain excess citrus juice and add onion, carrots, tomatoes, jalapeños, and cilantro, tossing to combine.
- Season with salt and additional citrus juice if desired.
- Serve with tostadas, tortilla chips, or saltine crackers, along with hot sauce and mayonnaise.
