Ingredients

The ceviche

  • 1 pound raw shrimp, thawed
  • 1 cup citrus juice
  • 1 medium onion, finely diced
  • 1 large carrot, peeled and finely chopped
  • 1-2 large roma tomatoes, seeded and finely chopped
  • 1-2 pieces jalapeño peppers, minced
  • 1 bunch fresh cilantro, minced
  • to taste salt

For serving

  • as needed tortilla chips or tostadas or saltine crackers
  • as needed mayonnaise
  • as needed hot sauce

Instructions

  1. Peel and clean the shrimp by removing the tail and shell, then slice the back to remove the vein.
  2. Chop the shrimp into ½-inch pieces and place in a bowl with citrus juice, tossing to coat.
  3. Cover and refrigerate until the shrimp is opaque, about 2 to 4 hours.
  4. Drain excess citrus juice and add onion, carrots, tomatoes, jalapeños, and cilantro, tossing to combine.
  5. Season with salt and additional citrus juice if desired.
  6. Serve with tostadas, tortilla chips, or saltine crackers, along with hot sauce and mayonnaise.
