Instructions
- Combine the shrimp, lime juice, red onion, and salt in a large bowl.
- Let the mixture sit for 20 minutes, stirring occasionally until the shrimp are opaque.
- Add the cucumbers, jalapeño, cilantro, and scallion to the bowl.
- Serve immediately with tortilla chips or plantain chips.
