Ingredients

  • 1 scallion, chopped
  • to taste tortilla chips or plantain chips, for serving

Instructions

  1. Combine the shrimp, lime juice, red onion, and salt in a large bowl.
  2. Let the mixture sit for 20 minutes, stirring occasionally until the shrimp are opaque.
  3. Add the cucumbers, jalapeño, cilantro, and scallion to the bowl.
