Easy Shrimp Ceviche

The ceviche

The dressing

fresh lime juice

guajillo or ancho chili powder

ground cumin

Instructions
- Combine shrimp, carrots, mango, jalapeño, red onion, and cilantro in a large bowl.
- In a separate bowl, whisk together lime juice, chili powder, cumin, and salt.
- Pour the lime juice mixture over the shrimp mixture and toss to combine.
- Cover and refrigerate for 25-30 minutes, stirring every 10 minutes, until shrimp are pink.
- Serve immediately.
