Roasted Winter Vegetables with Za’atar

Ingredients

The vegetables

  • 1 large sweet potato, peeled, cubed
  • 2 medium parsnips, unpeeled, cubed
  • 1 medium red onion, sliced
  • 1 pound Brussels sprouts, halved
  • 1 clove garlic, minced

The dressing

  • tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 2 teaspoons za’atar
  • to taste freshly ground black pepper
  • to taste sea salt (optional)

Instructions

  1. Preheat the oven to 400°F.
  2. In a large baking dish, combine sweet potato, parsnips, red onion, Brussels sprouts, and garlic.
  3. Drizzle the mixture with olive oil and lemon juice.
  4. Sprinkle with za’atar, black pepper, and optional salt.
  5. Roast in the oven on the top rack for about 35-40 minutes, stirring every 15 minutes, until golden brown and tender.
  6. Serve immediately.
