Instructions
- Preheat the oven to 400°F.
- In a large baking dish, combine sweet potato, parsnips, red onion, Brussels sprouts, and garlic.
- Drizzle the mixture with olive oil and lemon juice.
- Sprinkle with za’atar, black pepper, and optional salt.
- Roast in the oven on the top rack for about 35-40 minutes, stirring every 15 minutes, until golden brown and tender.
- Serve immediately.
