Ingredients

The base

  • 3 tablespoons butter
  • 2 tablespoons flour
  • 2 cups water
  • 1 12-ounce can evaporated milk
  • 3 cups whole milk
  • 1 pound uncooked pasta

The seasonings

  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 teaspoon Creole seasoning
  • ½-1 teaspoon ground mustard
  • salt and pepper to taste

The cheese

  • 1 cup freshly grated mozzarella cheese
  • 2-3 cups freshly shredded sharp cheddar cheese
  • 1 cup freshly grated gouda cheese

Instructions

  1. Melt butter in a skillet and whisk in flour until fully mixed.
  2. Slowly add water, evaporated milk, and whole milk, whisking to avoid lumps, and simmer until thickened.
  3. Stir in the uncooked pasta and seasonings, then bring to a boil and cook on low heat until pasta is done.
  4. Add the cheeses and stir until melted and smooth, adjusting thickness with water or milk if necessary.
  5. Season with salt and pepper to taste, then serve hot.
