Ingredients

The base

  • 2 tablespoons butter
  • 2 tablespoons flour
  • 2 cups water
  • 3 ½ cups milk
  • 1 pound elbow macaroni
  • ¾ teaspoon salt
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ½ teaspoon smoked paprika
  • ¼ teaspoon black pepper

The cheese

  • 4 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese

The garnish

  • 1 tablespoon chopped parsley

Instructions

  1. Melt the butter in a large pot over medium heat and whisk in the flour for about 30 seconds.
  2. Pour in the water and whisk until smooth and slightly thickened.
  3. Add the milk and whisk until combined.
  4. Stir in the macaroni, salt, garlic powder, onion powder, smoked paprika, and pepper, then bring to a simmer.
  5. Cook for 8-10 minutes, stirring occasionally, until the pasta is tender.
  6. Reduce the heat to low and stir in the cheeses until the sauce is smooth.
  7. Sprinkle with parsley and serve immediately.
