Ingredients

The cookie dough

  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • ¾ cup Dutch process cocoa
  • 1 cup unsalted butter
  • 1 cup granulated sugar
  • 1 cup light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¼ teaspoon peppermint extract
  • 1 cup semi-sweet chocolate chips
  • 2 cups chopped Mint Chocolate Cookie Crisps

For serving

  • Chocolate Mint Chip Ice Cream for serving

Instructions

  1. Preheat the oven to 350°F and prepare ramekins with cooking spray.
  2. In a bowl, whisk together the flour, baking soda, salt, and cocoa.
  3. Cream the butter and sugars until smooth, then add the eggs one at a time followed by the vanilla extract.
  4. Gradually mix in the flour mixture until combined, then fold in the chocolate chips and mint cookie crisps.
  5. Press ¼ cup of the cookie dough into each ramekin.
  6. Place the ramekins on a baking sheet and bake for 12-14 minutes until set around the edges but soft in the center.
  7. Let the cookies cool for a few minutes before topping with ice cream and serving.
