Instructions
- Preheat the oven to 350°F and prepare ramekins with cooking spray.
- In a bowl, whisk together the flour, baking soda, salt, and cocoa.
- Cream the butter and sugars until smooth, then add the eggs one at a time followed by the vanilla extract.
- Gradually mix in the flour mixture until combined, then fold in the chocolate chips and mint cookie crisps.
- Press ¼ cup of the cookie dough into each ramekin.
- Place the ramekins on a baking sheet and bake for 12-14 minutes until set around the edges but soft in the center.
- Let the cookies cool for a few minutes before topping with ice cream and serving.
