Instructions
- Cream the butter, yogurt, coconut sugar, and granulated sugar until fluffy.
- Add the egg and vanilla, mixing until incorporated.
- Blend in the baking soda and salt, then gradually add the flour until just combined.
- Stir in the chocolate and mint chips, then refrigerate the dough for at least 1 hour.
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- Scoop the dough onto the baking sheet, spacing them 1 inch apart.
- Bake for 7 minutes until barely dry on top but still soft inside.
- Cool on the baking sheet for 5 minutes before transferring to a cooling rack.
