Ingredients

The dough

  • 5 tablespoons unsalted butter
  • 2 tablespoons nonfat plain Greek yogurt
  • ¾ cup coconut sugar
  • ¼ cup granulated sugar
  • 1 large egg
  • teaspoons pure vanilla extract
  • ¾ teaspoon baking soda
  • ½ teaspoon kosher salt
  • cups white whole wheat flour

The chips

  • 10 ounces mixed mint and dark chocolate chips

Instructions

  1. Cream the butter, yogurt, coconut sugar, and granulated sugar until fluffy.
  2. Add the egg and vanilla, mixing until incorporated.
  3. Blend in the baking soda and salt, then gradually add the flour until just combined.
  4. Stir in the chocolate and mint chips, then refrigerate the dough for at least 1 hour.
  5. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  6. Scoop the dough onto the baking sheet, spacing them 1 inch apart.
  7. Bake for 7 minutes until barely dry on top but still soft inside.
  8. Cool on the baking sheet for 5 minutes before transferring to a cooling rack.
