Ingredients

The cookie dough

  • 3 ½ cups whole wheat pastry flour (or unbleached all-purpose flour)
  • 1 teaspoon baking soda
  • 1 teaspoon aluminum-free baking powder
  • ¾ teaspoon fine-grain sea salt
  • 1 cup unsalted butter, at room temperature
  • 2 cups sugar
  • 3 large eggs
  • 1 tablespoon vanilla extract

The mix-ins

  • 2 cups peppermint bark, roughly chopped
  • ½ cup chocolate chips or shaved chocolate

Instructions

  1. Preheat the oven to 375°F and prepare baking sheets with parchment paper.
  2. Whisk together the flour, baking soda, baking powder, and salt in a bowl.
  3. In a large bowl or stand mixer, beat the butter until fluffy, then add sugar and mix until thick.
  4. Add eggs one at a time, mixing well after each addition, then stir in vanilla.
  5. Gradually add dry ingredients in three increments, mixing until a uniform dough forms.
  6. Fold in the chopped peppermint bark and chocolate chips, reserving some bark for topping.
  7. Drop heaping tablespoons of dough onto prepared sheets, spacing them 2 inches apart.
  8. Bake for 10 to 14 minutes until golden, then cool on wire racks.
