Peppermint Bark Chocolate Chip Cookies

Instructions
- Preheat the oven to 375°F and prepare baking sheets with parchment paper.
- Whisk together the flour, baking soda, baking powder, and salt in a bowl.
- In a large bowl or stand mixer, beat the butter until fluffy, then add sugar and mix until thick.
- Add eggs one at a time, mixing well after each addition, then stir in vanilla.
- Gradually add dry ingredients in three increments, mixing until a uniform dough forms.
- Fold in the chopped peppermint bark and chocolate chips, reserving some bark for topping.
- Drop heaping tablespoons of dough onto prepared sheets, spacing them 2 inches apart.
- Bake for 10 to 14 minutes until golden, then cool on wire racks.
