Ingredients

The dough

  • 3 cups whole wheat pastry flour (or unbleached all-purpose flour)
  • 1 cup non-alkalized cocoa powder
  • 1 teaspoon baking soda
  • 1 teaspoon aluminum-free baking powder
  • ¾ teaspoon fine-grain sea salt
  • 1 cup unsalted butter, at room temperature
  • 2 cups sugar
  • 3 large eggs
  • 1 tablespoon vanilla extract

Add-ins

  • 2 cups peppermint bark, roughly chopped
  • ½ cup miniature chocolate chips (optional)

Instructions

  1. Preheat the oven to 375°F and prepare baking sheets with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt.
  3. In a large bowl or mixer, beat the butter until fluffy, then add sugar and mix until thick.
  4. Incorporate eggs one at a time, then stir in vanilla.
  5. Gradually add dry ingredients, mixing until a moist dough forms.
  6. Stir in chopped peppermint bark and optional chocolate chips by hand.
  7. Drop heaping tablespoons of dough onto baking sheets, spacing them 2 inches apart.
  8. Bake for 10 to 14 minutes until fragrant, then cool on wire racks.
