Instructions
- Preheat the oven to 375°F and prepare baking sheets with parchment paper.
- In a bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt.
- In a large bowl or mixer, beat the butter until fluffy, then add sugar and mix until thick.
- Incorporate eggs one at a time, then stir in vanilla.
- Gradually add dry ingredients, mixing until a moist dough forms.
- Stir in chopped peppermint bark and optional chocolate chips by hand.
- Drop heaping tablespoons of dough onto baking sheets, spacing them 2 inches apart.
- Bake for 10 to 14 minutes until fragrant, then cool on wire racks.
