peppermint bark, chopped up
Instructions
- Melt dark chocolate and pour onto a lined jelly roll pan, spreading evenly.
- Refrigerate until hardened.
- Sift crushed peppermint candy to separate large chunks from the sand.
- Melt white chocolate and stir in a drop of peppermint oil.
- Fold peppermint sand into the white chocolate carefully.
- Spread white chocolate over hardened dark chocolate and sprinkle peppermint chunks on top, pressing gently.
- Refrigerate until hardened, then break into pieces.
- Sift the dry ingredients for the cookies.
- In a mixing bowl, combine butter, brown sugar, and sugar, beating until smooth.
- Add egg and vanilla, mixing well.
- Gradually add dry ingredients and mix until combined.
- Fold in chopped peppermint bark.
- Drop dough by heaping tablespoons onto a lined baking sheet, spacing them apart.
- Bake at 350°F for about 10 minutes.
- Allow cookies to cool on the baking sheet for a minute before transferring to a cooling rack.
