Ingredients

Peppermint Bark

  • 1 lb dark chocolate, chopped
  • 1 lb white chocolate, chopped
  • 1 drop peppermint oil
  • 12 pieces peppermint candy canes, crushed (about 1 cup)

Peppermint Bark Cookies

  • 1 ½ cups flour
  • 1 tsp baking soda
  • ½ tsp salt
  • ½ cup unsalted butter at room temp
  • ½ cup brown sugar
  • 6 T sugar
  • 1 large egg
  • 1 tsp pure vanilla extract
  • 1 ½ cups peppermint bark, chopped up

Instructions

  1. Melt dark chocolate and pour onto a lined jelly roll pan, spreading evenly.
  2. Refrigerate until hardened.
  3. Sift crushed peppermint candy to separate large chunks from the sand.
  4. Melt white chocolate and stir in a drop of peppermint oil.
  5. Fold peppermint sand into the white chocolate carefully.
  6. Spread white chocolate over hardened dark chocolate and sprinkle peppermint chunks on top, pressing gently.
  7. Refrigerate until hardened, then break into pieces.
  8. Sift the dry ingredients for the cookies.
  9. In a mixing bowl, combine butter, brown sugar, and sugar, beating until smooth.
  10. Add egg and vanilla, mixing well.
  11. Gradually add dry ingredients and mix until combined.
  12. Fold in chopped peppermint bark.
  13. Drop dough by heaping tablespoons onto a lined baking sheet, spacing them apart.
  14. Bake at 350°F for about 10 minutes.
  15. Allow cookies to cool on the baking sheet for a minute before transferring to a cooling rack.
