Fresh Sweet Corn Salsa

Instructions
- Remove the husks and silk from the corn and cut the stem off the bottom.
- Stand the ear of corn upright and slice downward to remove the kernels into a bowl.
- Dice the tomatoes and finely dice the jalapeño after removing the seeds.
- Finely dice the red onion and roughly chop the cilantro.
- Add the corn, tomatoes, jalapeño, onion, and cilantro to the bowl.
- Juice the lime and drizzle about 2 tablespoons over the vegetables, then sprinkle with salt.
- Stir the mixture well, taste, and adjust lime or salt as needed.
- Serve immediately or refrigerate for later.
