Crunchy Cilantro-Lime Hummus Tacos

Ingredients

The taco shells

  • 12 taco-size corn or wheat tortillas
  • as needed none extra-virgin olive oil for brushing

The hummus

  • 1 small garlic clove
  • 1 15-ounce can chickpeas
  • 3 tablespoons tahini
  • 1 lime zest and juice
  • 1 tablespoon nutritional yeast seasoning
  • ½ teaspoon salt
  • to taste none freshly ground black pepper
  • 1 tablespoon extra-virgin olive oil
  • ¼ cup cilantro leaves

The toppings

  • as needed none taco sauce or salsa
  • as needed none mixed lettuce greens

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Brush one side of the tortillas with olive oil and fold them, securing the edges with toothpicks.
  3. Bake the tortillas until golden on the bottom, about 8 minutes.
  4. In a food processor, chop the garlic and add the chickpeas, tahini, lime zest, lime juice, nutritional yeast, water, salt, and pepper, then puree until smooth.
  5. Drizzle in olive oil while the motor is running, then add cilantro and process until finely chopped.
  6. Remove the taco shells from the oven, open them carefully, and smear hummus inside each shell.
  7. Turn the tacos with the golden sides facing up and return to the oven for 4 minutes.
  8. Drizzle taco sauce inside and fill with mixed greens, then serve immediately.
