Crunchy Cilantro-Lime Hummus Tacos

Instructions
- Preheat the oven to 400°F (200°C).
- Brush one side of the tortillas with olive oil and fold them, securing the edges with toothpicks.
- Bake the tortillas until golden on the bottom, about 8 minutes.
- In a food processor, chop the garlic and add the chickpeas, tahini, lime zest, lime juice, nutritional yeast, water, salt, and pepper, then puree until smooth.
- Drizzle in olive oil while the motor is running, then add cilantro and process until finely chopped.
- Remove the taco shells from the oven, open them carefully, and smear hummus inside each shell.
- Turn the tacos with the golden sides facing up and return to the oven for 4 minutes.
- Drizzle taco sauce inside and fill with mixed greens, then serve immediately.
