Ingredients

The Hummus

  • 1 container Sabra Classic Hummus
  • teaspoons dry taco seasoning
  • ½ teaspoon canola oil

The Toppings

  • 3 tablespoons black beans, canned, drained and rinsed
  • 3 tablespoons frozen corn kernels
  • 1 clove garlic, minced
  • 3 tablespoons chopped tomatoes
  • 1 wedge lime
  • 1 tablespoon chopped scallions

Instructions

  1. Mix 1½ teaspoons of taco seasoning into the hummus until well combined.
  2. In a small skillet, heat canola oil over medium heat.
  3. Add black beans and corn to the skillet and cook for 1-2 minutes.
  4. Stir in garlic and tomatoes, cooking for an additional minute.
  5. Squeeze lime juice over the mixture and add the remaining ¼ teaspoon of taco seasoning, stirring to coat.
  6. Remove from heat and pile the mixture onto the center of the hummus.
  7. Serve immediately or chill in the refrigerator before serving.
