Mexican Black Bean Hummus

Ingredients

The hummus

  • 2 cups black beans, rinsed and divided
  • ¼ cup tahini
  • 3 tablespoons extra virgin olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon sriracha or any kind of hot sauce
  • 2 tablespoons lime juice
  • ½ teaspoon salt
  • ½ teaspoon cumin

The toppings

  • ¼ cup red onions, finely diced
  • ¼ cup tomato, diced
  • 1 tablespoon Nakano Rice Vinegar
  • cup cilantro, chopped
  • 1 tablespoon cotija cheese crumbles
  • ¼ teaspoon sea salt

Instructions

  1. Place ½ cup of black beans at the bottom of a bowl and set aside.
  2. In a food processor, combine the remaining black beans, tahini, olive oil, garlic, sriracha, lime juice, salt, and cumin. Blend until smooth, scraping the sides as necessary.
  3. If the hummus is too thick, add more olive oil until the desired consistency is reached.
  4. Pour the blended hummus over the black beans in the bowl.
  5. For the topping, mix red onions, tomato, cilantro, cotija cheese, sea salt, and rice vinegar together.
  6. Sprinkle the topping over the hummus before serving.
