Mexican Black Bean Hummus

sriracha or any kind of hot sauce

The toppings

red onions, finely diced

Instructions
- Place ½ cup of black beans at the bottom of a bowl and set aside.
- In a food processor, combine the remaining black beans, tahini, olive oil, garlic, sriracha, lime juice, salt, and cumin. Blend until smooth, scraping the sides as necessary.
- If the hummus is too thick, add more olive oil until the desired consistency is reached.
- Pour the blended hummus over the black beans in the bowl.
- For the topping, mix red onions, tomato, cilantro, cotija cheese, sea salt, and rice vinegar together.
- Sprinkle the topping over the hummus before serving.
