Easy Chimichurri White Bean Hummus

Ingredients

  • 2 cups cooked organic white navy beans or cannellini
  • 1 cup parsley
  • ½ to ¾ cup packed cilantro
  • cup tahini
  • ½ of a shallot or ⅓ cup red onion, chopped
  • ¼ cup olive oil or avocado oil
  • 1 tablespoon red wine vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon minced garlic
  • ½ teaspoon sea salt
  • pinch black pepper
  • ½ teaspoon dried oregano
  • ½ teaspoon red chili pepper flakes
  • to taste black pepper

Instructions

  1. Drain the beans and chop the parsley, removing the stems.
  2. In a food processor or blender, combine the parsley, beans, tahini, and onion, and blend until smooth.
  3. Slowly add the oil and the remaining ingredients, except for the black pepper and chili flakes.
  4. Blend again until a thick dip forms.
  5. Transfer to a bowl and top with black pepper, chili pepper, and additional parsley, cilantro, and sea salt if desired.
