Beet White Bean Hummus

Ingredients

The hummus

  • 1 can (15-ounce) cannellini or white beans
  • 3 medium cooked beets
  • 1 large clove garlic
  • 1 small lemon
  • 1 ½ tablespoons tahini
  • 1 tablespoon extra virgin olive oil
  • ½ teaspoon paprika
  • ¼ teaspoon red chili pepper flakes
  • to taste salt (optional)

The garnish (optional)

  • to taste fresh herbs, chopped
  • to taste balsamic vinegar
  • to taste extra virgin olive oil
  • to taste sea salt
  • to taste freshly ground black pepper

Instructions

  1. Blend the beans, beets, garlic, lemon juice, tahini, olive oil, paprika, and red chili pepper flakes until smooth.
  2. Add salt to taste.
  3. Transfer to a serving dish and chill until serving.
  4. Garnish with fresh herbs, balsamic vinegar, olive oil, sea salt, and black pepper if desired.
