Beet Hummus

Ingredients

  • 1 medium-sized beet
  • ¼ cup water
  • 1 15-ounce can garbanzo beans
  • 1 clove garlic
  • 3 tablespoons tahini paste
  • 1 juice lemon
  • 1 teaspoon ground cumin
  • ½ teaspoon ground coriander
  • ¼ cup extra-virgin olive oil
  • to taste salt

Instructions

  1. Preheat the oven to 400°F.
  2. Slice off the beet greens and place the beet in a baking dish with water, cover with foil, and roast for 45 minutes.
  3. Once tender, cool the beet, then peel and cube it.
  4. In a food processor, combine the cubed beet, garbanzo beans, garlic, tahini, lemon juice, and olive oil.
  5. Blend until smooth, adding water as needed for desired consistency.
  6. Taste and adjust salt before transferring to a serving bowl.
