Beet Hummus

Instructions
- Preheat the oven to 400°F.
- Slice off the beet greens and place the beet in a baking dish with water, cover with foil, and roast for 45 minutes.
- Once tender, cool the beet, then peel and cube it.
- In a food processor, combine the cubed beet, garbanzo beans, garlic, tahini, lemon juice, and olive oil.
- Blend until smooth, adding water as needed for desired consistency.
- Taste and adjust salt before transferring to a serving bowl.
