Ingredients

The hummus

  • 12 ounces beets, cooked and peeled
  • 1 14-ounce can garbanzo beans, drained
  • ¼ cup tahini
  • 3 cloves garlic, peeled
  • ½ lemon juice
  • 3 Tbsp. Thrive Culinary Algae Oil, divided
  • ¼ cup reserved liquid from garbanzo beans
  • ½ – 1 tsp. salt, to taste

Optional toppings

  • to taste chopped parsley
  • to taste sesame seeds
  • to taste chopped pistachios or pumpkin seeds
  • to taste coarse or flaked sea salt

Instructions

  1. Blend beets, garbanzo beans, lemon juice, tahini, and garlic in a food processor.
  2. While blending, drizzle in 2 Tbsp. of oil and continue until smooth.
  3. If too thick, add reserved liquid from beans one tablespoon at a time until desired consistency is reached.
  4. Season with salt to taste.
  5. Serve with desired toppings and a drizzle of additional oil if desired.
  6. Store any leftovers in the fridge for up to 5 days.
