Beet Hummus
Ingredients
The hummus

beets, cooked and peeled

garbanzo beans, drained

cup
tahini
-

cloves
garlic, peeled

½
lemon
juice

Tbsp.
Thrive Culinary Algae Oil, divided

reserved liquid from garbanzo beans

salt, to taste
Optional toppings

to taste
chopped parsley

sesame seeds

chopped pistachios or pumpkin seeds

coarse or flaked sea salt
Instructions
- Blend beets, garbanzo beans, lemon juice, tahini, and garlic in a food processor.
- While blending, drizzle in 2 Tbsp. of oil and continue until smooth.
- If too thick, add reserved liquid from beans one tablespoon at a time until desired consistency is reached.
- Season with salt to taste.
- Serve with desired toppings and a drizzle of additional oil if desired.
- Store any leftovers in the fridge for up to 5 days.
