Golden Beet Hummus

Ingredients

The base

  • 1 14-ounce can chickpeas, drained and rinsed
  • 1 medium golden beet, peeled and quartered
  • 4-6 tablespoons fresh lemon juice
  • 4 medium garlic cloves
  • ¼ teaspoon fine grain sea salt
  • 2 tablespoons tahini
  • ⅓ - ½ cup ice water
  • ¾ teaspoon turmeric (optional)
  • pinch saffron (optional)
  • 3 tablespoons nutritional yeast (optional)

To serve

  • to taste sesame seeds, hemp seeds, edible chive/flower blossoms, chopped chives, toasted sesame oil

Instructions

  1. Peel the chickpeas to make the hummus smoother, if desired.
  2. Blend the chickpeas into a thick paste, then add the beets and blend again.
  3. Incorporate lemon juice, garlic, salt, and tahini, then slowly add ice water while blending.
  4. Add turmeric, saffron, and nutritional yeast, then blend again and adjust seasoning as needed.
  5. Serve the hummus in a bowl and top with optional garnishes.
