Lemon Beet Hummus

Ingredients

The hummus

  • 2 cups cooked whole beets
  • 15 ounce can chickpeas, rinsed and drained
  • 1 medium lemon (zest and juice)
  • ¼ cup tahini
  • 1 teaspoon coarse salt
  • ½ teaspoon ground black pepper
  • ½ teaspoon ground cloves
  • ¼ teaspoon cayenne pepper
  • ¼ cup olive oil

For serving

  • to taste pita bread or raw veggies

Instructions

  1. Combine the beets, chickpeas, lemon zest and juice, tahini, salt, black pepper, cloves, and cayenne in a food processor.
  2. Puree the mixture while slowly adding olive oil until smooth, scraping the sides as needed.
  3. Taste and adjust the seasoning if necessary.
  4. Serve with pita bread or chips.
